Victoria Moran



Victoria Moran is the author of eleven books including Creating a Charmed Life, Fit from Within, and Main Street Vegan: Everything You Need to Know to Eat Healthfully and Live Compassionately in the Real World. A sought after speaker and a certified holistic health counselor in private practice, she is the founder and director of Main Street Vegan and a vegan of nearly three decades. 


Dr. Tel Oren


Dr. Tel Oren was born in Jerusalem, Israel, where he currently authors books, sees patients in 15 clinics, and lectures extensively. With 2 doctorate degrees (in Chiropractic & in General Medicine), Dr. T is a renowned holistic scientist, author, innovator, and educator. He is a licensed European Medical Doctor (trained in Europe and in the USA), a US-licensed, Board-certified nutritionist and professor with the International & American Association of Clinical Nutritionists, and board-certified by the American Board of Functional Medicine, Boards of Oxidative Medicine and Chelation Therapy, Clinical Board of Nutrition, and the American Board of Disability Analysts, and a Doctor of Chiropractic – retired from active US practice in 2001. He is also President Emeritus and Professor of Medical Sciences & Functional Medicine with the University of Natural Medicine.





Chef AJ has followed a plant exclusive diet for over 35 years.  The author of Unprocessed, she teaches people how to incorporate more fresh fruits and vegetables in their diet in ways that are easy, delicious and fun. The former Executive Vegan Pastry Chef at Sante Restaurant in Los Angeles, she is proud to say that her IQ is higher than her cholesterol.

Mid-South native Bianca Phillips is the author Cookin’ Crunk: Eatin’ Vegan in the Dirty South, and she blogs daily at Vegan Crunk. She calls Memphis her home, but she was born and raised in the little town of Jonesboro, Arkansas, where she learned to cook from her Granny and Mama when she was just knee-high to a grasshopper. Bianca brings home the (tempeh) bacon through her day job as an editor at the Memphis Flyer alt-weekly newspaper. She’s the mother of 8 fur-babies (two pups and six kitties).



Ellen Jones


Ellen Jaffe Jones is “The Veg Coach,” aka “The Broccoli Rep,” because – as she puts it – “Who else is?” The author of ‘Eat Vegan on $4 a Day,’ she is an inspiring motivational speaker, personal trainer and running coach. She just placed in her 50th (!) 5K race for her age group since 2006. She also received her first “Senior Grand Masters” award for that race. This distinction means that she was the fastest female in the 60-69 year old category. Ellen keeps racing to show that you can do it “just”on plants. She also teaches healthy cooking classes designed by respected doctors and registered dietitians.




Omowale Adewale is a champion boxer, personal trainer and martial artist.  A vegetarian for 20 years, Mr. Adewale became a vegan in 2013. He has appeared in numerous media and publications on health, politics and hip hop, and he works to combat youth aggression and bullying in New York City. He is currently on international tour with his Boxing as Veg: The Tao of Plant-Based Training presentation. Attendees will learn about his nutrition plan, training regimen, boxing techniques and will also experience a 7-minute abs workout!

 Dr. Casey Taft


Dr. Casey Taft is co-founder of Vegan Publishers, recently formed with a mission to publish a range of books that promote social consciousness and awareness related to veganism. Dr. Taft is Associate Professor of psychiatry at Boston University School of Medicine. He is an internationally recognized clinical psychology researcher in the areas of trauma and preventing family violence, and has published over 100 journal articles, book chapters, and scientific reports. He is also the developer of the “Strength at Home Program,” designed to prevent conflict and improve the relationships of military families. He sees the prevention of violence towards animals and enhancing understanding among family members around issues related to veganism as a natural extension of this work.

From nine-to-fiver to lifestyle-designer, Kristin Lajeunesse has taken her background in marketing and applied it directly to the things she loves most: food, travel, and helping others discover ways in which they too can do what they love for a living. On February 14, 2010 Kristin launched the first and only vegan wedding resource website, Rose Pedals Vegan Weddings. While she was finding her entrepreneurial legs she honed her communications skills while working for the World Society For The Protection of Animals, and her social media consulting skills with Vegan Mainstream. Before long Kristin’s entrepreneurial and traveling spirit grew stronger, she left traditional comforts behind and in September 2011 hit the road on an epic, life-changing road trip across the country. Will Travel For Vegan Food was born and has since blossomed into a growing business venture. Kristin is currently working on a book about her road trip, and continues to stretch her entrepreneurial stride as she helps others grow their businesses through social media and online marketing guidance.
